Food – a microcosm to protect

The entire food supply chain is related to many aspects of food microbiology and hygiene. Therefore the Laboratory of Food Microbiology and Hygiene is closely cooperating with other laboratories of the Department and deals with specific topics in microbiology as well as with interdisciplinary issues.
In cooperation with laboratories and representatives of human medicine, pharmacy, biotechnology, animal nutrition and plant sciences, several microbiological aspects affecting food quality and food safety are studied. Among other research activities, the laboratory performs microbiological analyses of food and examinations related to hygiene issues in the production environment. In addition, the spectrum of established methods ranges from antagonism and antibiotic-resistance testing, as well as safety assessment of bacteria. Together with screening, identification and molecular typing methods of microorganisms, classical (aerobic and anaerobic) and modern microbiological tools complete the expertise of the research group.
