Food – a microcosm to protect
Overall, the whole food supply chain is related to food microbiology and its hygiene. Therefore the Division fmh ... (Food Microbiology and Hygiene) is closely connected to all other divisions of the Department and deals with very specific topics in microbiology as well as with interdisciplinary issues.
The main focal point of the division is food safety. In cooperation with representatives of human medicine, pharmacy, biotechnology, animal nutrition and plant sciences we study the influence of microbiology on food quality and food safety.
Competences
Microbiological analysis of food as well as enquiries in food hygiene.
Antagonism tests, testing of antibiotic susceptibility, safety of bacteria.
Screening, identification, characterization and molecular biological typing of lactic acid bacteria.
Classical microbiology and molecular biology for analysis of microorganisms (identification, quantification, fingerprinting, microbiota monitoring, detection of antibiotic resistance genes).
Current topics
Transfer of antibiotic resistance through the food chain.
Change of microflora in the intestine depending on diet.
Development of new technologies in microbiological food quality.
Isolation and characterization of new probiotic strains.
